From sweet to savory, the University of Hawaii at Mānoa’s Food Truck Row is packed with four new food trucks: Slice by HB Baking, HI Cravings, Big Belly Eatery, and Ahi & Vegetable.

Slice by HB Baking

The newest addition to the university’s food truck lineup is a local, family-owned store called Slice by HB Baking, owned and operated by David and Heather Lukeli.

Serving up to eight dollar “cutie pies” which are miniature versions of their signature ice cream pies in mugs for students on the go. These cutiepies come in six different flavors: Strawberry Shortcake, Cuddly Bear, Rocky Road Cookie Dough, Matcha Cookies & Cream, Mint Chocolate Brownie, and Banana Caramel Butterfinger.

David Lukeli is excited to serve the campus community as a former KCC culinary graduate who wants to show students what they are capable of.

“I wanted to come back to school and reconnect with the students and show them the possibilities,” David Lukeli said. “You go to school, you can start your own business and thrive there.”

Slice by HB Baking also has a retail outlet at Jolene’s Market Beretania in the Chinatown Cultural Plaza, where it has been operational for just over a year. For more information, visit their website at hbbaking.com.

HI cravings

Another addition to Food Truck Row is HI Cravings, a customizable acai bowl restaurant. Acai bowls often consist of various fruits, granola, and toppings placed on a bed of frozen, crushed acai berries.

Restaurant Happy Belly

Adding to the lineup of recent additions to Food Truck Row is Happy Belly Eatery, a tasty stop for college students looking to try local Asian fusion-style lunches. Happy Belly Eatery is open to the public from: Tuesday, Wednesday and Thursday from 10 a.m. to 2 p.m.

“Our top plate is our mixed plate. It comes with a jumbo shrimp katsu and your choice is a chicken katsu blast,” said Happy Belly Eatery cashier Travis Asaeli. “So it’s chicken katsu topped with our spicy aioli sauce and our unagi sauce. And the chicken sriracha is our homemade honey sriracha.

Ahi & Vegetables

ʻAhi and Vegetable is the newest place to get fresh fish right on campus, making it easy for University of Hawaiʻi students to sample authentic fish.

Ahi & Vegetable’s goal is to serve food all over the island, which is how they came up with the concept of Ahi & Vegetable on wheels.

The ʻonolicious food truck prides itself on its fresh, local fish. All Ahi & Vegetable fish is sourced locally from Fresh Island Fish.

Jason Taiempo, who is the chef of the food truck ʻAhi and Vegetable, said the quality of the fish was the best he had ever worked with.

ʻAhi & Vegetable has two stores, one on Dillingham Boulevard and the other inside the Ala Moana Center.

“This is my first time going to the food truck in Mānoa, but I went to their store in Ala Moana,” said Malulani Paiste, a second-year bioengineering student. “I’ve been ordering from them for about three years.”

University of Hawaii at Mānoa student Eric Wolfe said he was surprised and excited when he found out Ahi and Vegetable were on campus.

The truck sells salads, sashimi, sushi, bento and poke, making it easy for customers to take their food on the go.

“My favorite thing about ʻAhi & Vegetable is how fresh and easy to scoop it is,” Wolfe said.

ʻAhi and Vegetable is open 10 a.m. to 2 p.m. Monday through Friday. If you love fresh seafood, stop by Food Truck Row to try this new addition to the UH campus.

Available at your nearest chain store from November 14, the limited-time holiday-themed smoothies can be enjoyed until December 26. The holiday-themed smoothies include two favorite holiday flavors – Apple Pie and Snickerdoodle – with the goodness of whole fruit.

STRAWBERRY-LEMONADE PIE

MAKES A 9 INCH PIE

Growing up in Chicago, summer meant sticky weather, festivals, block parties every weekend, and hours spent hanging out by the lake, opening the fire hydrant to create a makeshift water park. and eat Italian ice cream.

Italian gelato is a frozen, tangy dessert usually served in a polystyrene cup with a straw and a spoon. It is made with simple ingredients including water, sugar, ice, fruit pieces and lemon zest.

When the Chicago humidity proved too much to bear, one of my favorite childhood memories was driving down Taylor Street in Chicago’s Little Italy to get Italian gelato at Mario’s Italian Lemonade. The line for Mario’s was always at least three quarters of a block long. Their all-natural Italian gelato was available in flavors such as cantaloupe, watermelon, pineapple, cherry, banana, and, of course, lemon. My favorite was a combination of lemon and strawberry, and that’s the inspiration for this pie.

The acidity of this pie, mixed with the burst of strawberries, makes it an absolute success during the summer.

4 large egg yolks

2 cans (14 oz/396 g) sweetened condensed milk

Finely grated zest of 1 large lemon

¾ cup (187g) lemon juice (from 3 or 4 large lemons)

Graham cracker crust (page 238)

1½ cups strawberries, hulled and quartered or thinly sliced ​​lengthwise

Set an oven rack in the middle position and preheat the oven to 350°F (175°C).

In a bowl, whisk together the egg yolks, sweetened condensed milk and lemon zest until completely blended – the sweetened condensed milk will thin out. While whisking, slowly pour in the lemon juice until fully blended.

The mixture will begin to thicken as the acids in the lemon juice react with the proteins in the sweetened condensed milk. Let stand 5 minutes to thicken further.

Place the graham cracker pie crust on a baking sheet and pour the filling.

Bake pie until tiny bubbles emerge on surface of pie filling, about 15 minutes. Remove pie from oven and refrigerate for at least 6 hours to cool and set.

Once the pie is completely cooled and you are ready to serve, top the pie with the strawberries. There is always an option to enjoy the pie without strawberries too.

To store, place in a pie or cake tin and refrigerate for up to 7 days or freeze for up to 2 months. Take the pie out of the freezer and let it thaw for 15 to 20 minutes before slicing.

GRAHAM CRACKER CRUST

MAKES A 10-INCH PIE CRUST

1¾ cups (227 g) graham cracker crumbs, store-bought or homemade (recipe follows)

1 tablespoon packed light brown sugar

8 tablespoons (1 stick / 113g) unsalted butter, melted

In a medium bowl, stir together graham cracker crumbs, brown sugar and melted butter until crumbs are well combined with butter and no dry crumbs are visible. Transfer the crumbs to a pie pan or baking dish and press down so that the crumbs form a solid layer on the bottom and sides of the pan or baking dish. See the recipe for how to bake the crust.

Noodles are about as universal as a culinary love language: from thick udon noodles in Japan to thin baby capellini in Italy, beloved dishes including sheet, ribbon, tube, shell and dozens of other forms can be found worldwide. . Is the pasta vegan, though? The answer is largely yes, but there are some exceptions.

Whether layered in a rich lasagna or Vietnamese soup like pho, as much a childhood staple as macaroni noodles or carefully handcrafted lamian noodles, our collective love affair with all the noodles is easy to observe and understand.

What is pasta?

Pasta and noodles are used interchangeably, but they can mean different things. Pasta is generally defined as a product made with a dough of durum wheat and water, is derived from the word dough, referring to unleavened dough that is formed into dozens of shapes. Pasta can be gluten free.

Asian noodles can be made with different types of flour, such as whole wheat or buckwheat, as well as gluten-free varieties made from rice, sweet potato starch, and konjac-based shirataki.

History of pasta making in different cultures

Although celebrated around the world, the first recorded noodles – estimated to be 4,000 years old – were found in northwest China and since then Asian countries have developed the most varieties. .

Eastern noodles are believed to have reached Italy through nomadic Arab traders before the time of Marco Polo, who is falsely credited with bringing them to the country. Today, there are beloved national dishes with noodles from Germany to South Africa, Thailand to Spain, from comfort food to elegant and upscale dishes.

Types of pasta

Pasta goes beyond your macaroni and cheese or spaghetti and meatballs. Dumplings matter! And there is so much more to explore.

Spaghetti: Long and thin durum wheat pasta. But can also be made gluten-free from rice or bean-based noodles like chickpea flour.

Linguini: Wider than spaghetti and thinner than fettuccine and perfect for swirling your vegetable meatballs.

Tubular pasta: Rigatoni, cannelloni, penne and ziti are examples of hollow pasta in the middle. These hold up well to heavy sauces and lighter dairy-free cream sauces.

ramen: Chinese wheat noodles, traditionally prepared with kansui, a type of alkaline mineral water. Use them in ramen, sure, but they’re delicious anywhere you want to use them.

Different shapes of pasta

Pasta comes in at least 350 different shapes, but is generally divided into different categories based on their relative shape.

Long pasta: Long pastas include spaghetti, fettuccine, and vermicelli, to name a few varieties. It is usually pasta designed to be served in a sauce and tossed around with a fork.

Short pasta: Some shortened pasta shapes include macaroni, cavatappi, and penne. Also served with a sauce, the shape is ideal for piercing with a fork and pairs well with larger additions to the dish, such as beans and roasted vegetables.

soup pasta: Alphabet, ditali, anchellini and conchigliette are small shapes of pasta commonly found in soups. They add bulk and texture to soups.

Stretched pasta: These are usually discs of pasta made by rolling the dough, and include cencioni and orecchiette. Also perfect with a sauce.

Pasta to garnish: Ravioli are iconic, of course, but tortellini and cannelloni are also popular pasta varieties to use with toppings. They are perfect to fill with vegan ricotta and roasted mushrooms. and more.

Gnocchi pasta: A category in its own right, gnocchi is a dumpling made from potatoes and flour, but sometimes also eggs and cheese. It’s great tossed with a simple vegan butter sauce, simple veggies, and dairy-free parmesan cheese.

Different types of Asian noodles

Asian noodles are usually long in shape but made with a wider variety of ingredients. Here are six popular types you can find.

Vermicelli: Also known as cellophane, these clear, thin noodles are made with mung bean sweet potato starches and are naturally gluten-free.

ramen: Ramen noodles are traditionally made from wheat and have a springy, silky texture.

rice noodles: From thinner noodles to wider varieties, rice noodles are gluten-free, soft and versatile.

Shirataki: Made with konjac yam starch, these noodles are thick and opaque, and often served like rice noodles.

Udon: Thicker wheat noodles, udon are dense and chewy, making them perfect for soup.

Is the pasta vegan?

Some contain eggs, milk and butter. European-style pasta and Asian noodles can be made with egg in the dough, which is usually the only animal product used.

When shopping at the grocery store for Italian pasta, note that most brands of fresh refrigerated pasta contain eggs unless otherwise specified. Although canned dried pasta is less likely to contain eggs than fresh pasta, it’s always a good idea to check the ingredient label. He may note possible allergens that the product came into contact with on shared equipment during its manufacture, but is not included in the ingredients.

Also note that when dining at Italian restaurants with fresh pasta, the pasta is likely to contain egg unless otherwise specified. Ask your server!

Along with Asian noodles, be aware that wonton, chow mein, and lo mein noodles often contain eggs, whether you’re shopping at the grocery store or dining out.
